Featured Meatball Recipe

Ingredients
- 750 g (1½ lbs) ground beef
- 1 cup soft breadcrumbs
- 2 medium onions, finely chopped
- 2 tablespoons chopped parsley
- ¼ cup (65 ml) milk salt and pepper flour
- 2 tablespoons (40 g) butter
- 1 tablespoons (20 ml) oil
- 450 g can tomatoes, chopped
- 2 teaspoons cornflour
- 1 cup (250 ml) water cooked spaghetti
Recipe
- Combine meat with breadcrumbs, ½ the onion, 1 tablespoon parsley, salt, pepper and milk and mix thoroughly. Shape mixture into 16 round balls and toss in flour to coat.
- Heat oil and butter or margarine in a pan, add the meat balls and brown them all over; remove meat balls and set aside.
- To pan juices add remaining ½ of onion and saute until soft, add tomatoes with liquid and cook 3-4 minutes, stirring to break tomatoes to a pulp. Blend the cornflour with a little of the water, then stir into the tomato mixture; gradually stir in remaining water.
- Return meat balls to the pan, bring to the boil, reduce heat, cover, and simmer gently for 30 minutes.
- Serve meatballs in tomato sauce sprinkled with remaining 1 tablespoon parsley on top of hot spaghetti.
