Curried Meatballs & Rice

Ingredients
- 750 g (1½ lbs) ground beef
- 1 cup soft breadcrumbs
- 1 medium onion, chopped finely
- 4 teaspoons curry powder
- ½ cup sultanas
- ½ cup (125 ml) milk 1 egg
- salt and pepper flour
- dry breadcrumbs
- 4 tablespoons (80 ml) oil
- chopped parsley
- 1 cup rice
Recipe
- Cook rice in boiling salted water for 15 minutes and drain.
- Combine meat with breadcrumbs, onion, 1 teaspoons of curry powder, sultanas, ¼ cup of milk, egg, salt and pepper and mix thoroughly; form mixture into small balls and dredge with flour, dip in remaining ¼ cup milk and toss in dry breadcrumbs.
- Heat 3 tablespoons of oil in a pan, add meatballs and cook, turning often, to brown all over.
- Remove meatballs and set aside. To pan juices add remaining 1 tablespoon oil and heat; stir in remaining 3 teaspoons curry powder; spoon in cooked rice and stir to coat rice with curry oil.
- Return meatballs to the pan, cover, and simmer gently for 15-20 minutes, stirring occasionally.
- Serve curried meatballs and rice sprinkled with parsley.
