Liver Ball Soup

Ingredients
- 4 cups (1 litre) Beef Stock
- ½ teaspoon oregano
- ½ cup (125 ml) tomato puree
- chopped chives
Liver Balls
- 125g (¼ lb) ground calves liver
- 1 cup soft breadcrumbs, firmly packed
- 1 tablespoon chopped parsley
- 2 teaspoons dried onion flakes
- ½ teaspoon celery salt
- pinch seasoned pepper
- 1 tablespoon flour
- 1 egg
Recipe
- For the liver balls, combine all ingredients in a bowl and mix well, using the hands, to a smooth consistency. Form into small balls and chill for 2-3 hours.
- Combine stock, oregano and tomato puree in a deep pan and bring to the boil. Drop in liver balls, cover and simmer for 15-18 minutes. Serve into warm bowls and sprinkle with chopped chives.
