Liver Ball Soup

Ingredients

  • 4 cups (1 litre) Beef Stock
  • ½ teaspoon oregano
  • ½ cup (125 ml) tomato puree
  • chopped chives

Liver Balls

  • 125g (¼ lb) ground calves liver
  • 1 cup soft breadcrumbs, firmly packed
  • 1 tablespoon chopped parsley
  • 2 teaspoons dried onion flakes
  • ½ teaspoon celery salt
  • pinch seasoned pepper
  • 1 tablespoon flour
  • 1 egg

Recipe

  1. For the liver balls, combine all ingredients in a bowl and mix well, using the hands, to a smooth consistency. Form into small balls and chill for 2-3 hours.
  2. Combine stock, oregano and tomato puree in a deep pan and bring to the boil. Drop in liver balls, cover and simmer for 15-18 minutes. Serve into warm bowls and sprinkle with chopped chives.
