Meat Ball Soup

Ingredients

  • 1 leek, sliced
  • 2  small carrots, sliced
  • 1 medium onion, chopped
  • 1 tablespoon chopped parsley
  • ½ teaspoon thyme
  • 1 bay leaf salt and pepper
  • 4 cups (1 litre) Beef Stock
  • extra chopped parsley

Meat Balls

  • 2 slices stale bread
  • ¼ cup (65 ml) milk
  • 500 g (1 lb) finely ground beef
  • 2 eggs
  • salt and pepper
  • ½ teaspoon nutmeg
  • ½ teaspoon thyme

Recipe

  • Combine leek, carrots, onion, parsley, thyme, bay leaf, salt, pepper and stock in a deep pan and bring to the boil. Reduce heat, cover and simmer for 18-20 minutes.
  • For the meat balls, soak bread slices in milk for 3-4 minutes, then squeeze out liquid and place bread in a bowl with ground beef and mix well. Pass mixture through a fine sieve and return to the bowl.
  • Add eggs, salt, pepper, nutmeg and thyme and mix thoroughly, shape into tiny balls, add to the simmering soup and cook for 3-4 minutes. Serve piping hot, sprinkled with chopped parsley.
