Meat Ball Soup

Ingredients
- 1 leek, sliced
- 2 small carrots, sliced
- 1 medium onion, chopped
- 1 tablespoon chopped parsley
- ½ teaspoon thyme
- 1 bay leaf salt and pepper
- 4 cups (1 litre) Beef Stock
- extra chopped parsley
Meat Balls
- 2 slices stale bread
- ¼ cup (65 ml) milk
- 500 g (1 lb) finely ground beef
- 2 eggs
- salt and pepper
- ½ teaspoon nutmeg
- ½ teaspoon thyme
Recipe
- Combine leek, carrots, onion, parsley, thyme, bay leaf, salt, pepper and stock in a deep pan and bring to the boil. Reduce heat, cover and simmer for 18-20 minutes.
- For the meat balls, soak bread slices in milk for 3-4 minutes, then squeeze out liquid and place bread in a bowl with ground beef and mix well. Pass mixture through a fine sieve and return to the bowl.
- Add eggs, salt, pepper, nutmeg and thyme and mix thoroughly, shape into tiny balls, add to the simmering soup and cook for 3-4 minutes. Serve piping hot, sprinkled with chopped parsley.
